Roasted BeetRoots and Carrots with Garlic-Herb Tahini Sauce

Ingredients

  • 2 tablespoons olive oil

  • 1/2 cup tahini

  • 1/4 cup water

  • 2 tablespoons lemon juice

  • 2 garlic cloves, minced

  • 1 teaspoon dried dill

  • Salt and pepper, to taste

Instructions:

Preheat the oven to 400°F (200°C).

  1. Toss the cubed beet roots and carrots with olive oil, salt, and pepper in a large mixing bowl. Spread evenly on a baking sheet lined with parchment paper.

  2. Roast the vegetables for 35-40 minutes, or until tender and slightly golden.

  3. While the vegetables roast, whisk together all tahini sauce ingredients in a small bowl. Adjust the consistency with more water if necessary.

  4. Serve the roasted beet roots and carrots on a plate, drizzled with garlic-herb tahini sauce.
